Ramen Soup

1. Taking a sample

When preparing a sample, stir the soup then take the sample from the pot. Avoid any oil that may be floating on the soup surface as much as possible. Apply a drop of the sample to the prism surface using a plastic spoon or pipette.
*Rich soup such as Tonkotsu-ramen soup may contain too much oil to be measured accurately. Please contact an ATAGO representative to discuss the best measurement methods for your soup.

2.Measuring Method

 ● Hand-Held Refractometers  <RS-32>
1) After stirring the soup well, apply a drop to the prism surface with a plastic spoon or pipette. Make sure the sample is spread evenly over the prism when closing the daylight plate.   2) Look through the eyepiece. Read the boundary line where the blue and the white color meet. This is the Brix (%)

1) After mixing the soup well, apply a drop to the prism surface with a plastic spoon or pipette. If the soup contains oil, agitate it lightly in the sample stage before measuring.   2) Press the "START" key.
The measurement value is displayed digitally.
 ● Measurement value may vary if the same sample on the prism surface is continuously measured. Reasons for the change in measured values include the influence of oil, infusible solids, or sudden drop in the temperature of the sample.
 ● When using a digital model, take the average of several repeated measurements.

Concentration varies depending on the type of ramen soup being measured.

  Brix
 Sapporo - ramen 5.2%
 Kitakata - ramen 8.1%
 Hakata - ramen 10.1%
 Yokohama - ramen 6.1%
 Hakodate - ramen 6.6%
 Tokyo - ramen 4.6%

4.Why measure ramen-soup?

1.Measuring is helpful for controlling the consistency of the soup.

2.It is useful when cooking to a pre-determined consistency, especially among chain stores.

3.Convenient for finding the concentration of your soup when comparing different stores or brands.
